Brownstones Coffee, 55 Merrick Road, Amityville: Imagine Hash and Eggs, slow-cooked corned beef with our seasoned potatoes and served with two eggs the way you like them. It's one of many appealing platters you can order at this breakfast and brunch restaurant chain with locations also in Amityville and East Northport.

Toast Coffeehouse, 9 S. Park Ave., Bay Shore:  A breakfast and lunch cafe with an artistic vibe is their mission, according to the restaurant where Banana Bread Pancakes are among a bunch of specials you can try.

A Yelp reviewer, Jennifer D., of Brooklyn, said, "Came for a weekend trip to Bay Shore and ended up eating here twice! It's the perfect breakfast/brunch stop on the way to the Fire Island Ferries. Service is fast, though they do get busy."

Maureen's Kitchen, 108 Terry Road, Smithtown: Omelettes, pancakes, cheese blintzes, eggs Benedict with home fries are on a short list of specials written in cursive a recent Monday breakfast board at this cozy breakfast and brunch diner.
